Although the juice is used in Japanese cuisine, the fruit is too sour for direct consumption. The juice is ideal for salad dressings, clear soups or as a dip. Diluted with water and slightly sweetened, it also serves as a refreshing drink in summer and is suitable for desserts as well as savoury dishes, sauces, salads, fish tartare or sushi.
