Yuzu is characterised by its unique, strong aroma and pronounced citrus flavour as well as its high vitamin C content.  It is in season during the winter months. Although the juice is used in Japanese cuisine, the fruit is too sour for direct consumption. The juice is ideal for salad dressings, clear soups or as a dip. Diluted with water and slightly sweetened, it also serves as a refreshing drink in summer and is suitable for desserts as well as savoury dishes, sauces, salads, fish tartare or sushi. You can also create your own ponzu sauce with high-quality soya sauce.
