Unagi sauce is a thick and sweetened form of soy sauce with a sweet and salty flavour. It is traditionally served with Japanese grilled dishes such as eel, but also with noodles and snacks. Although it is called ‘eel sauce’, it does not contain eel. The name comes from the tradition that unagi sauce was originally served with grilled eel, as with unadon.
