Sasanishiki rice, known for its light flavour, comes from Miyagi. This rice is praised for enhancing the flavours of other ingredients without masking them. Its earthy, mild flavour perfectly complements any sushi and intensifies the flavour of the ingredients used. However, ‘Sasanishiki’ is susceptible to cold damage and disease, which makes cultivation difficult. As a result, the number of producers is constantly decreasing and the rice is even referred to as ‘phantom rice’. Recently, it has become a rarity and now only accounts for 0.2 % of the national area under cultivation.
